After cooking some spaghetti squash (side note: can I just say steaming up a squash, then it magically turning into spaghetti is rad to the max! So thankful for God making our food in such a variety of ways)…okay, so anyway, after cooking the squash I oven roasted the seeds following this recipe as a guideline.

I used salt, pepper, and chili powder.
I had some apples that were starting to get a little wrinkly, so I grated them and then baked them into a cinnamon apple breads. The sky was gray and leaves were blowing outside my window, so baking apple bread felt very appropriate. When I started making them, I realized I was almost out of white flour, so I mostly used whole wheat. Yay for more fiber I guess! 🙂
Speaking of fall weather, we’re currently in that sweet spot of energy use. We haven’t been running the ac, but haven’t needed to turn the heater on yet either. Yay for lower energy bills!
I made a last minute cheap meal. Long story short, I thought the kids would be eating somewhere else, but that got canceled last minute. I cooked up some rice, then made a sauce with black eyed peas, veggies, and other miscellaneous things.
I went shopping at Wal-Mart today, and among other things, I got a clearance chicken, and some bags of clearance pizza salad. My son loves the stuff!
