You know how blogs love to have a long story before they share the recipe? Well I’m about to do that! You’ve been warned!
While I have multiple fond memories of visiting my Great Grandma Jones as a girl, one stands out in my mind. My mom and I went to visit her (I’m guessing my older siblings were in school that day). Grandma Jones served us grilled cheese sandwiches, but as I looked at my sandwich I saw something I’d never seen before and my little-kid mind was blown! She had put TWO kinds of cheese in it! There was orange cheese AND white cheese! I didn’t know you could do such things, and it was wonderful!
Grandma Jones loved cheese! And here is how (more or less) she made baked macaroni and cheese. I got the recipe from my mom and doubled it. Another warning: This isn’t an exact recipe, you have to follow your heart a little. 🙂

- Pasta 4 cups dry (I did1 lbs which is close to 4 cups)
- Cheese (amount as much as you like….make Grandma Jones proud!) Cheddar and any other cheese you might want to add.
- 4 eggs
- 4ish cups of milk
- Salt
- Butter
- Black Pepper
Cook pasta according to package directions. I used penne, but you could do whatever shape you like.
Mix eggs, milk and salt.
Put the pasta in a 9×13 casserole dish.
Pour the egg/milk mixture over it.
Mix cubed cheese in.
Dot the top with butter. I go light on the butter as I figure there’s plenty of fat going on in here already.
Sprinkle with cracked black pepper.
Bake at 350 F until done (I took mine out at just under an hour).

Going into the oven! And then I neglected a photo of the finished product, so you’ll have to use your imagination.
You know that old lady that always waddles into a potluck with homemade baked mac-n-cheese? Well, I’m fast becoming that old lady, as this is starting to be my go-to potluck dish.
