It’s been almost a week since I last posted! We’ve been busy prepping the bathtub to be refinished, painting the shed, yardwork, church events, and getting ready for another school year.
We’re saving huge by my daughter choosing to attend a small, local community college. While most of my frugal antics I share here save a little bit here and there this one is saving probably thousands of dollars. Plus its close enough she can live at home and commute.
Still getting okra from the garden! And more peppers are coming in now. The cowpeas are thriving too. Zucchini hasn’t done as good as I remember it doing last year. We’ve eaten 2 deliciously sweet yellow watermelons from my husband’s garden. And I got overly excited and picked our first cantaloupe too early…wasn’t sweet at all.

We’re eating food cooked at home, which saves so much money! And apparently we’re eating lots of rice, because as I looked back at the recent food photos on my phone this is what I found:

A nice meat-less option. I love eating it chilled for a refreshing meal. Here’s a recipe I sorta follow for it.

I can’t remember which greens I cooked into this rice, but I think it was sweet potato. Our sweet potato vines are trying to take over, so we ate some!!!

This is a Senegalese dish, the green stuff is made with bissap (roselle hibiscus) leaves and okra, both from my garden.
I borrowed books and dvds from the library. I was surprised by how many new movies they had! We’ll probably watch one of them for our family film night.
