Frugal Five – Leftover Wizardry

I made a random leftover casserole. It had 3 different leftover rices, chicken, and I made a mushroom sauce, then topped it with cheese. Reminds me of Amy Dacyczyn talking about making a casserole using “leftover wizardry” in The Complete Tightwad Gazette.

I went grocery shopping at Wal-Mart and bought tons of groceries. But included in that was a bunch of clearance items I scored including: 3 breads, chicken livers, a bag salad and 6 coffees. Remember how I recently mentioned the price of coffee? I was very happy about this bargain!

My husband harvested his very first watermelon!!! Can’t wait to see if it’s sweet and juicy!

I have 4 kinds of basil growing, so pesto seemed like it should be on my menu plan, but have you seen the price of pine nuts?? Never fear, there’s a much cheaper option for your pesto, actually there’s lots of options out there. The one I tried was sunflower seeds, as that’s what I had on hand. I used this recipe and my immersion blender and made a pesto that we used in some chicken wraps. I put three of the basil types I have (all but the Thai basil) in the pesto.
